Cowboy Casserole

Crockpot Recipe

This is a hearty and meaty crockpot dish. I guess it originated as a one pot meal for cowboys on a cattle drive. I've added a few twists, of course, to jazz it up for today's dinner table.

You'll need a slow-cooker or crock pot, a skillet, plus the following ingredients:

1 large onion (coarse chopped)
1 lb of ground beef*
1 lb kielbasa sausage (sliced)
8 medium potatoes (peeled and sliced)
1 15.5 oz. can of red beans
1 10 3/4 oz. can of condensed tomato soup

Salt
Ppepper
8-10 cloves of garlic (smashed and diced)

*In the skillet, brown the ground beef, while cooking, add the garlic, drain.

In your slow-cooker or crokpot, layer in (starting at the bottom), the onions, ground beef, potatoes, kielbasa, and beans. You'll want to add salt and pepper, as you're going along. Top it off, by spreading the tomato soup over the final layer. Cover, and cook for about 8 hours.

If you'd like it spicy, feel free to add a couple of jalepeno peppers (fine chopped) to your ground beef, while its browning. Also add a few hefty dashes of red hot sauce to the tomato soup topping.

Its a far cry from what the chuck wagon served on the trail, but its an enjoyable one-pot-wonder!
