A gingerbread man is a human-like figure made of gingerbread, and Christmas wouldn't be the same without a batch of them. There is no better feeling, than to walk into a house that is filled with the fragrant aroma of ground ginger, nutmeg, cinnamon and cloves.

You can alter your gingerbread men in many ways. For soft cookies bake them a little less time than the recipe states, because the longer they bake the harder they will become. You can also, decorate your cookies several ways, press raisins or candies into the dough for eyes and buttons while the cookies are still warm or wait until they cool and attach them with icing. You can even ice the entire cookie if desired.



Decorating them isn't the only way to make your gingerbread cookies unique. You can make the dough into chocolate dough by replacing one cup of the flour with one cup of unsweetened baking cocoa. You can also change the color of the dough, depending on the type of molasses you use. The cookies can be made into ornaments or gift tags, just make a hole in the top of the cookie before baking them. You aren't limited to just gingerbread men any more, you can find cookie cutters in the shape of gingerbread women as well as animals.


This dough freezes very well, as do the baked cookies. The cookies will also keep for several weeks if stored in a airtight container.
