Old Fashion Pecan Divinity and Coconut Orange Peanut Balls

The other day I was going through an old trunk that had been given to me by my cousin. It had belonged to my Aunt Cleo. While digging through old clothes and pictures, I discovered my aunt's recipe book and I was lost for the rest of the day. Just reading the recipes brought back memories of sitting in her kitchen and watching her make Pecan Divinity. It was always in the fall when the pecans starting falling from her pecan tree that she would get out the pots and start making divinity. It was the kind that seemed to melt in your mouth and my cousin and I would eat until we were miserably stuffed. Her recipe for Pecan Divinity is so delicious that I have to share it with you.

Old Fashion Pecan Divinity

2 cup Sugar
1/2 cup Corn syrup
1/2 cup Water
1/8 teaspoon Salt
1/8 tablespoon Cream of tartar
2 large Eggs - whites only
1 cup Chopped Pecans
1/2 teaspoon Vanilla extract

Beat egg whites until stiff and set aside. Combine sugar, syrup, water, salt, and cream of tartar. Cover and boil 5 minutes. Uncover. Wipe sides of pan with damp cloth. Continue to boil without stirring to firm ball stage (245 - 248 F). Remove from heat. Pour slowly, over stiffly beaten egg whites, beating constantly. Continue beating until mixture holds its shape. Add vanilla and pecans. Drop by spoonfuls onto a waxed paper lined cookie sheet. Cool and enjoy.



Another favorite recipe of Aunt Cleo's, and mine, was Coconut Orange Balls, she always made these around Christmas time. I guess, because everyone always seemed to have orange slice candy around the house that time of the year. This recipe was so easy, that she would sometimes let me and my cousin make them. But, usually we just waited for her to finish, our mouths watering in anticipation. So, please try these recipes and give them to friends, I know Aumt Cleo would love that.

Coconut Orange Peanut Balls

12oz. package orange slices(diced)
1 cup chopped peanuts
14oz. package flaked coconut
14oz. can condensed milk
2/3 cup powdered sugar

Combine peanuts, orange slices and coconut in large mixing bowl. Add condensed milk, mix well. Shape into 1 inch balls and roll in powdered sugar. Makes about 8 or 9 dozen.
