Because I've had to start eating in more health-concious manner, salads have become a big part of daily diet. Store-bought salad dressings (unless you're really careful) have a tendancy to contain more sodium and other ingredients your diet may not allow.

I've come up with a very simple vinegrette dressing. It just takes a minute or two to whip this together. I think crushing the garlic takes the longest.

Juice of a lime
1/4 cup red wine vinegar (use cider vinegar if you prefer)
1/8 cup extra virgin olive oil
1 teaspoon black pepper
2 garlic cloves (smashed and minced)

You can mix this up right in your measuring cup, or if you want to get fancy on me, use your food processor.
