Best in the West Nugget Rib Cook-off
An estimated 300,000 people are expected to "pig out" in
Sparks, Nevada. They'll feast on 130,000 pounds of pork ribs,
as The 16th annual "Best in the West Nugget Rib Cook-off" runs
through Monday. For the last 10 years, Curly's Foods Inc., in
Sioux City, Iowa has supplied ribs for the contest.
There are 25 chefs in the competition, who all agree that
you don't want much fat on the ribs, you want lots of lean meat.
The contestants will cook up "two-and-a-quarter down, St. Louis style"
ribs. That means each rack of ribs weighs about 2 1/4 pounds, and
St. Louis is the style of the trim. First prize
in the 5-day cook-off is $7,500, a 4-foot trophy and, the
most important: bragging rights!
