Seasoning Cast Iron Skillets

A friend of mine aquired a set of cast iron skillets, which are great to cook with (particularly if you're making cornbread).

His were rusty, and he wanted to know the best way to clean them up and get them seasoned.

A combination of lemon juice and salt will remove the rust, and you can re-season the skillets by coating them with oil and baking them in a hot oven, the same way you'd season a new cast iron skillet.

NEVER use water and detergent to clean such cookware! Just wipe it out, and (if need be) give it a light coating of oil.
