Microwave Bread and Butter Pickles

A Recipe for that "Homemade" Taste



I've always had a passin for homemade pickles. When I was younger, I recall an elderly German woman made absolutely the BEST pickles that I've ever eaten. She would, unfortunately, never share her recipe.

Pickles used to take alot of time, but with today's modern technology (its called a microwave), you can have some pretty tasty pickles in a few minutes with very little effort.

Lets get on with the recipe! By the way, feel free to experiment and adjust this to YOUR individual taste. It makes the recipe "personal" and cooking more fun!

INGREDIENTS:
1 cup sugar
1 cup white vinegar
1/2 cup water
2 tablespoons salt
1 (or 2) teaspoons dried minced garlic (depends on your taste)
1 teaspoon mustard seeds
1/2 teaspoon celery seeds
1 teaspoon tumeric
1 medium onion, peeled and sliced thin
3 pounds pickling cucumbers, sliced
Toss in some dill, if you prefer. For an "oriental flair" try some grated ginger!

Mix all (except onions and cucumbers) in a large microwave safe bowl. Then, stir in cucumbers and onions. Microwave 9 minutes* on high, stopping to stir every 3 minutes. Remove from microwave and cool (room temp). Cover and refrigerate overnight before placing in jars. Distribute the juice evenly if you use more than one jar. Store in your refrigerator. Makes a great gift for friends!
